 | Witness Point 2011 Pinot
Noir Mostly whole berry
ferments with a small amount of whole bunch. No additions, including sulphur
through fermentation and barrel maturation stages, with sulphur added only at
bottling. All wines produced in 2011 benefitted from rigorous bunch selection
at picking, and further bench sorting prior to processing.
Complex and predominantly
savoury aromatics of salty dried plum, rhubarb, Turkish delight, Earl Grey,
green olive, moss, beetroot and pickling spice. Damson plum, red currant,
cranberry and Seville orange flavours, with hints of pith, treacle, baklava and
brown spice. A wine that is light to medium in body with a silky mouth feel and
a lingering, drying finish.

Sauvignon Blanc
Whole bunch ferments,
with a portion left on skins for more than 12 months, as well as extended
barrel maturation combine to make a white wine that is as much about texture as
flavour, and as far removed from the clichéd style of, ‘sav blonk’ as the
variety will allow. No additions, including sulphur, through fermentation and
barrel stages, with sulphur added only at bottling.
Fruit
skin aromatics of banana peel and essential oils of citrus, with topical notes
and hints of fennel seed and freshly baled hay. Full bodied and unctuous on the
palate with fruit nectar and ripe stone fruit flavours to the fore. The wine
flavour builds along the tongue and into the gums with grippy tannins and pithy
astringency. A mélange of flavours to finish including citrus spectrum,
nectarine, fig and banana.

Mostly whole bunch
fermented with a small portion of wine added from a de-stemmed ferment. No
additions, including sulphur through fermentation and barrel maturation stages,
with sulphur added only at bottling.
Warm
conditions through the ripening period produce a bright wine with pretty
aromatics of red fruits, mixed spice, black pepper, fennel, violets and a faint
whiff of stalks. The nose is complexed by a hint of balsam. Medium bodied to
taste, with an overall impression of prettiness. Red fruit flavours mingle with
intense damson plum and background leafiness. Spice develops along the mid to
back palate with evident black pepper notes amongst sweet earth flavours of
beetroot, parsnip and sarsaparilla root. A soft finish is firmed slightly by
sappy drying tannins. |
